Ingredients

  • 250 g apricots
  • 500 g strawberries
  • 2 Kiwis
  • 500 g gelesugar (2:1)
  • 1 lemon (unprocessed)

Instructions

    Score apricots crosswise, blanch with boiling water for 1 minute, cool and peel. Halve and pit apricots. Rinse and clean strawberries. Peel kiwis. Dice fruits small. Put in a pot and briefly mash with a wooden spoon.

    Stir gelesugar into the fruit. Wash lemon, zest without white pith, squeeze juice. Mix zest and juice into the fruit. Cook while stirring until boiling, then simmer for 3 minutes, stirring occasionally. Remove lemon zest.

    Fill clean screw-top jars up to the rim with jam. Seal and place upside-down on the work surface for 10 minutes.
