Apricot Jam with Chili

Ingredients
- 500 g apricots
- 6 oranges
- 1 lemon
- 1 large chili pepper
- 500 g gelification sugar (3:1)

Wash, halve, pit, and chop the apricots. Juice the oranges and lemon well and combine the juice with the apricots in a pot; heat. Simmer for about 5-10 minutes, then strain through a sieve and let the liquid drain overnight.

Wash the chili pepper, slice it diagonally into thin rings, and remove seeds and white membranes.

Measure 800 ml of the strained juice and add sugar and chili rings to a pot, stirring constantly while heating.

Bring the jam to a rolling boil for about 3-4 minutes, perform a setting test, then fill prepared jars up to the rim. Seal jars tightly, place them on their lids for 10 minutes, flip, and let cool completely; clean jars if needed and label afterwards.
