Ingredients

  • 1 kg apricots
  • 1 untreated lemon
  • 400 g fruit sugar (2:1)
  • 40 ml rum
  • 1 tbsp lavender buds (fresh plucked)

    Boil the apricots, shock them in cold water, peel, halve, pit and cut into pieces. Wash the lemon hot and grate its zest. Squeeze out the juice. Mix both with the apricots and fruit sugar in a large pot. Let it steep for about 30 minutes so some juice forms.

    Then bring to a boil while stirring and simmer for about 4 minutes until sparkling. Add the rum and lavender buds, then perform a setting test.
