Yellow Jam (Orange, Apricot, Almond)

Ingredients

  • 1 kg orange juice
  • 300 g apricots
  • 3 tbsp Lemon juice
  • 400 g gelatine sugar (2:1)
  • 50 ml orange liqueur
  • 50 g almond flakes

Instructions

    Squeeze the oranges and strain the juice through a sieve if desired. Top up to 400 ml with water if needed.

    Wash, halve, pit the apricots and cut the flesh into very thin slivers. Mix with the orange juice, lemon juice, and almonds; stir in the gelatine sugar and bring to a boil while stirring occasionally. Let simmer gently for about 3‑4 minutes according to package instructions, skim off any foam that rises, then stir in the orange liqueur and pour the jam into prepared clean jars while still hot. Seal immediately.
