Three-Color Popsicle with Melon

Try the Three-Color Popsicle with Melon from Spoonsparrow. An ice treat without refined sugar yet still sophisticated.
Ingredients
- 100 g honey
- 1 untreated lemon (juice and zest)
- 500 g watermelon flesh
- 200 g yogurt (3.5% fat)
- 150 g cantaloupe flesh (green)
- 1 Lime (juice)

Boil honey with 350 ml water and lemon juice until it dissolves, then let cool.

Cut watermelon into pieces and finely puree, optionally including seeds. Stir in about three-quarters of the honey syrup and pour the mixture into popsicle molds. Freeze for about 2 hours; after roughly 1 hour insert a stick into each ice pop.

Whisk yogurt with lemon zest and 3–4 tablespoons of syrup. Pour over the frozen watermelon ice and freeze for another hour.

Finely puree cantaloupe flesh with lime juice and remaining syrup. Fill the molds again and let freeze completely for at least 2 more hours.
