Ingredients
- 1 kg ripe apricots
- 250 g butter
- 300 g cane sugar
- 2 tsp Cinnamon
- 200 g spelt flour
- 100 g Ground Almonds

Grease a baking dish with butter as needed. Wash the apricots, pat dry, halve them, remove pits, and cut into wedges. Melt the butter in a saucepan, remove from heat, and mix with cane sugar and cinnamon in a bowl.

Stir in the spelt flour and almonds, then process into crumbs. Add the apricot pieces, gently fold everything together, and spread it evenly in the baking dish.

Bake in a preheated oven at 200°C (180°C fan; gas: level 2–3) for about 40 minutes until golden brown. Serve the apricot crumble warm and garnish with vanilla ice cream if desired.
