Apple Muffin
Looking for a tasty snack that can also be healthy thanks to the many minerals in apples? This apple muffin is just the thing.
Ingredients
- 1 large apple
- 1 splash Lemon juice
- 155 g whole wheat flour
- 155 g spelt flour
- 2.5 tsp baking powder
- 0.5 tsp Baking soda
- 3 tsp ground cinnamon
- 1 egg
- 160 g raw cane sugar
- 80 ml Rapeseed oil
- 1 pinch Vanilla powder
- 250 ml buttermilk
- 30 g Ground Almonds
- 90 g soft butter
- 2 tsp powdered sugar made from raw cane sugar

Line the depressions of a muffin tin with paper liners.

Wash, halve, core and dice the apple. Drizzle with lemon juice. In a bowl combine 130 g each of the flours, baking powder, baking soda, 2 tsp cinnamon and the apple pieces.

In another bowl whisk the egg, add 100 g sugar, oil, vanilla powder and buttermilk; mix well. Add the dry ingredients and stir briefly until just combined.

For the streusel, rub together remaining flour, almonds, remaining sugar, 1 tsp cinnamon and soft butter by hand to form crumbs.

Fill the muffin tin cavities with batter, sprinkle with streusel and bake in a preheated oven at 180 °C (fan 160 °C; gas 2–3) for about 30 minutes.

Let the apple muffins rest in the pan for another 5 minutes, then lift them out of the liners and dust with powdered sugar before serving.
