Ingredients
- 500 g beef tartare
- 2 red onions
- 3 egg yolks
- 2 tsp mustard
- 3 whole grain baguettes
- 2 lettuce hearts
- 8 anchovy fillets
- 1 Spring onion
- 5 small pickled cucumbers (from jar)
- 0.5 bunch Chives
- 1 can caviar
- 3 tbsp capers
- Salt
- Pepper
Instructions

Peel and finely chop onions, mix with tartare, egg yolks and mustard, season with salt and pepper.

Cut baguette sticks diagonally into slices. Top each slice with a bit of lettuce, spread generous amounts of tartare on top. Rinse anchovies cold, finely chop them. Wash spring onion, trim ends, cut into thin rings. Slice cucumbers into fan shapes. Add a dab of caviar to the tartare. Garnish with anchovies, spring onions, cucumber fans and some chives.
