Salmon Rolls with Cucumber and Caviar

Ingredients
- 600 g smoked salmon (slices)
- 1 cucumber
- 2 tbsp grape seed oil
- 6 tbsp Noilly Prat
- 2 tbsp white wine vinegar
- Herb salt
- freshly ground white pepper
- 1 bunch dill
- 200 g Sour Cream
- 2 tsp lemon juice
- 30 g Keta caviar

Wash the cucumber and slice lengthwise into thin strips with a paring knife. Whisk grape seed oil, 3 tbsp Noilly Prat, and vinegar; season with salt and pepper. Pour the dressing over the cucumber slices, cover, and let marinate for 1 hour.

Whip the sour cream with the remaining Noilly Prat, salt, and pepper until smooth; fold in chopped dill. Set aside a few sprigs of dill for garnish.

Arrange cucumber strips on a work surface, lay a salmon slice over each, drizzle with lemon juice, and roll loosely. Place the salmon rolls on the dill sauce and top with caviar and dill sprigs.
