Tajine with Chicken, Onions and Lemon Confit

Ingredients
- 1 chicken (about 1.2 kg, ready to cook)
- Salt
- Pepper (freshly ground)
- 125 g green olives (pitted)
- 1.5 salt lemons
- 250 ml poultry broth
- 50 g butter
- 2 tbsp olive oil
- 4 onions
- 3 Garlic cloves
- 1 tsp ginger powder
- 0.5 can saffron
- 2 tbsp chopped coriander
- 2 tbsp chopped parsley
- parsley for garnish
- salt lemon for garnish
Instructions

Rinse the Tajine well.

Divide the chicken into 8 portions, rub with salt and pepper, and set aside.

Peel the onions and cut them into strips.

Rinse the salt lemons, pat dry, then cut into large pieces and set aside.

Heat butter and oil in the Tajine, add onions and sauté until translucent. Add garlic, ginger, saffron and broth, stir well, season with salt and pepper. Add the chicken portions, cover and simmer gently for about 45 minutes. If needed, add a little more broth during cooking.

Stir in olives, lemons, coriander and parsley, cover and simmer for another ~15 minutes. Taste and serve immediately.

Garnish with parsley leaves and salt lemon slices.
