We love tabbouleh! Prepare the juicy Taboulé à la ➸ Spoonsparrow!
Ingredients
- 400 ml Vegetable broth
- 200 g bulgur
- 2 Tomatoes
- 2 chili peppers
- 4 Spring Onions
- 1 Zucchini
- 1 stalk Celery
- 40 g fresh parsley
- 3 tbsp Lemon juice
- 4 tbsp olive oil
- Salt
- pepper (ground)
- parsley for garnish

Heat the broth in a pot, stir in the bulgur and let it soak for 30 minutes. Slice the tomatoes crosswise, blanch them briefly, cool, peel, halve, seed, and finely chop the flesh. Cut the chili peppers lengthwise, remove seeds, and dice finely. Wash, trim, and slice the spring onions into rings. Wash, trim, and cube the zucchini. Wash, trim, and mince the celery.

Wash the parsley, shake dry, and roughly chop the leaves. Mix parsley, lemon juice, olive oil, salt, pepper, and all vegetables with the bulgur. Let it rest for 20 minutes, then taste and adjust seasoning before serving. Garnish with parsley.
