Ingredients
- 100 g bulgur
- Salt
- pepper (from grinder)
- 2 lemons (including juice)
- 75 ml olive oil
- 1 bunch parsley
- 2 tbsp mint
- 1 bunch spring onions
- 3 tomatoes
- mint for garnish
Instructions

Prepare the bulgur according to package instructions, then let it cool. Transfer to a bowl and season with salt and pepper; stir in olive oil and lemon juice, letting it rest for about 30 minutes.

Wash, trim, and finely chop the spring onions. Wash the tomatoes, quarter them, remove stems and seeds, and dice the flesh finely.

Stir parsley, chopped mint, tomatoes, and spring onions into the bulgur, taste, arrange in bowls, and serve.
