Ingredients

  • 200 g rice
  • 200 g Cherry tomatoes
  • 200 g tuna in its own juice (canned)
  • 1 Shallot
  • 1 bundle arugula
  • 1 cucumber salad
  • 3 tbsp balsamic vinegar
  • 1 tsp Honey
  • 5 tbsp olive oil
  • Sea salt
  • Cayenne pepper

Instructions

    Cook the rice according to package instructions, then let it cool.

    Wash and halve the tomatoes.

  3. 3.

    Drain the tuna well and flake it.

  4. 4.

    Peel and finely chop the shallot.

  5. 5.

    Wash, dry, and roughly chop the arugula, leaving a few leaves for garnish.

    Peel the cucumber, cut lengthwise in half, deseed, and dice. Combine all ingredients and fill glasses. Garnish with arugula.

    Mix balsamic vinegar with honey, olive oil, and 2 tbsp water. Season with salt and cayenne pepper and serve with the salad.
