Thai Shrimp Salad with Peanuts and Lime

Ingredients
- 200 g glass noodles
- 200 g shrimp (pre-cooked)
- 1 fresh red chili pepper
- 1 piece ginger (≈4 cm)
- 4 tbsp oil
- 150 ml fish stock
- pepper (ground)
- 2 tsp chili powder
- 2 tbsp Soy sauce
- 1 tbsp oyster sauce
- 1 Lime
- 0.5 bunch cilantro
- 4 tbsp chopped peanuts

Wash, deseed, and finely dice the chili pepper. Peel and finely dice the ginger. Roast the peanuts in a non-stick pan without oil and set aside.

Briefly stir-fry the shrimp in hot oil until crisp, then add fish stock and simmer for about 4 minutes. Season with salt, pepper, chili powder, soy sauce, oyster sauce, and lime juice. Wash and dry the cilantro.

Pour boiling water over the glass noodles, let them soak for 6 minutes, then drain, rinse with warm water, and allow to drip dry. Mix the noodles with the shrimp sauce.

Coarsely chop the cilantro and fold into the noodles. Serve garnished with roasted peanuts.
