Grilled Eggplants and Peaches

Ingredients

  • 2 Eggplants
  • 1 clove garlic
  • 4 tbsp olive oil
  • Salt
  • Pepper (freshly ground)
  • 6 peaches
  • 1 tbsp honey
  • 2 tbsp lemon juice
  • 1 tbsp coarsely chopped rosemary

Instructions

    Wash, trim and halve the eggplants lengthwise. Score the outer surfaces and cut faces crosswise several times. Peel and finely chop the garlic. Mix with 2-3 tbsp oil and season with salt and pepper. Brush the eggplants with the oil mixture and place them on the grill. Cook covered for about 20 minutes, brushing with oil midway and turning.

    Wash, halve and pit the peaches. Thread each half onto four skewers. Whisk honey with remaining oil, lemon juice and rosemary, then brush over the peaches. After about 10 minutes, add to the grill with the eggplants and allow them to brown all around.

    Remove both from the grill and serve.
