Swiss Chard Rolls

Ingredients
- 1 stalk Swiss chard
- 2 cloves garlic
- 1 piece celery
- 1 onion
- 1 tbsp butter
- Salt
- pepper (ground)
- 500 ml water
- 300 g Ground Beef
- 50 g breadcrumbs
- 1 egg
- 0.5 bunch Parsley
- 2 shallots
- 1 Carrot

Clean, wash and separate the green leaves from the stems of the Swiss chard. Cut the stems into pieces. Set aside the smallest leaves. Peel and halve the garlic. Peel and cut the celery into pieces. Peel and slice the onion. Melt the butter. Sauté the garlic, onion and celery in it for a moment. Add water, then add the chard stems and small leaves. Cover and simmer over low heat for 15-20 minutes. Season with salt and pepper. Strain through a sieve and set aside the broth. Blanch the largest chard leaves in another pot of salted water for 2 minutes. Lay flat on a kitchen towel. Peel and finely chop the shallots. Peel the carrot and cut it into tiny pieces with a paring knife. Finely chop the parsley. Mix the ground beef, breadcrumbs, egg, shallots, carrot, parsley, salt and pepper well together.

Place the meat mixture in the chard leaves and roll them up. Tie loosely with kitchen twine if desired. Pour the broth into a wide shallow pot, add the Swiss chard rolls. Bring to a boil briefly, then cover and simmer over low heat for 10-15 minutes until cooked through. Serve the rolls in the broth with some parsley on top. Pair with dark bread.
