Ingredients

  • 4 chicken breast fillets (about 140 g each)
  • Salt
  • Pepper (freshly ground)
  • 50 g macadamia nuts
  • 50 g cacao nibs (chopped cocoa beans)
  • 50 g breadcrumbs
  • 50 g flour
  • 2 eggs (large)
  • vegetable oil (for frying)

Instructions

    Wash the chicken fillets, pat dry, season with salt and pepper. Chop the nuts finely and mix with the cacao nibs and breadcrumbs. Dredge the fillets in flour, then dip them in beaten eggs, and coat thoroughly with the nut‑breadcrumb mixture. Fry in a hot pan over medium heat, turning until golden brown on all sides. Drain on paper towels.
