Macaroni with Cheddar

- 400 g short macaroni
- Salt
- 1 onion
- 4 tbsp butter
- 3 tbsp Flour
- 600 ml Milk
- 1 tsp Mustard
- 300 g cheddar
- a pinch cayenne pepper
- 2 tbsp chopped parsley
- fat (for the pan)
Instructions

Cook the macaroni according to package instructions in plenty of boiling salted water until al dente, drain into a colander, rinse with cold water and set aside.

Preheat the oven to 200°C (392°F) fan‑fry or conventional heat.

Peel and finely dice the onion. Melt butter in a saucepan over low heat, sauté onions until translucent, sprinkle flour on top and cook for about 1 minute while stirring. Gradually whisk in milk, simmer for about 2 minutes on low heat, then stir in mustard. Remove from heat. Grate cheddar and fold two‑thirds into the sauce. Season with salt and cayenne pepper.

Combine macaroni with the sauce and parsley. Grease a baking dish (about 20 x 25 cm). Spread macaroni mixture in the dish and top with remaining cheddar. Bake for about 30 minutes until golden brown.
