Try the Sweet Quiche from Spoonsparrow: a delicious shortcrust pastry topped with fruity apple filling.

Ingredients

  • 225 g puff pastry (1/2 package)
  • 3 Boskop apples
  • 3 tbsp Lemon juice
  • 2 tbsp sugar
  • 4 tbsp apricot jam

Instructions

    Let the puff pastry thaw while laid side by side. Then stack it again and roll out to the size of your pan. Line a greased baking dish with the dough and shape a rim.

    Peel, quarter, core, and cut the apples into strips. Immediately drizzle with lemon juice and sprinkle with sugar.

    Arrange the apple slices in a roof‑tile pattern on the dough and bake in a preheated oven at 200°C for about 25 minutes.

    Meanwhile, warm the apricot jam in a small saucepan and strain it through a sieve. Remove the finished cake from the oven and spread the warm jam over it while still hot.
