Ingredients
- 50 g coconut oil
- 30 g coconut blossom sugar
- 50 g unsweetened applesauce
- 100 ml oat milk
- 200 g spelt whole‑grain flour
- 2 tsp Weinstein baking powder
- Pinch of salt
- 500 g plums
Instructions

Combine melted coconut oil, coconut blossom sugar, applesauce and oat milk. In a separate bowl mix the whole‑grain flour, baking powder and a pinch of salt.

Add the dry mixture to the wet ingredients and stir well until smooth. Transfer the batter into a (greased if needed) springform pan.

Wash, pit and halve the plums, then cut them into wedges. Spread the plum slices over the batter evenly.

Bake the vegan plum cake in a preheated oven at 180 °C (fan‑forced 160 °C; gas: level 2–3) for 40 to 45 minutes. Remove from the oven, let it cool slightly and serve.
