Raw Cashew Brownies

The healthy and sweet raw brownies with cashews from Spoonsparrow impress even true clean baking fans.

Ingredients

  • 450 g dried dates
  • 150 g cashew kernels
  • 300 g ground almonds
  • 110 g cocoa powder (strongly defatted)
  • 45 g almond flour (3 tbsp)
  • 1 pinch salt
  • 0.5 Vanilla pod

Instructions

    Cover the dates lightly with water and soak overnight. The next day, drain the date water, reserving it for later use. Blend the softened dates with a hand blender into a creamy paste, adding some reserved date water if needed to achieve a smooth consistency.

    Chop the cashew kernels. Split the vanilla pod lengthwise, scrape out the seeds. In a mixing bowl combine almonds, cocoa, almond flour, 100 g of cashews, a pinch of salt and the vanilla seeds, then knead with the date paste until well incorporated.

    Fill the dough into a baking dish or loaf pan (30 x 20 cm) lined with parchment paper and press it firmly down.

    Refrigerate the dough for at least four hours to set. After chilling, cut into fifteen pieces and decorate with the remaining cashew kernels.
