Sweet Potato Radish Salad

Ingredients
- 600 g Sweet Potatoes
- 1 bunch radishes
- 1 Red Onion
- 150 ml meat broth
- 5 tbsp wine vinegar
- 1 tsp sharp mustard
- 4 tbsp Vegetable oil
- Salt
- ground pepper
- 3 tbsp chives sprigs

Wash the potatoes and boil them in salted water for about 30 minutes, then let them steam, peel, and slice thinly. Wash, trim, and cut the radishes into thin slices or julienne. Peel and finely chop the onion.

Boil the broth and vinegar, then add onions, salt, pepper, and mustard; pour over the potato slices. Let it steep for about 15 minutes, then stir in the oil and fold in the radishes. Taste again, and finally mix in the chives sprigs.
