Ingredients
- 300 g shrimp (pre-cooked)
- Salt
- 1 Garlic clove
- 40 g cashews
- 1 large ripe Thai mango
- 0.5 bunch mint (about 50 g)
- 3 stalks cilantro
- 1 chili pepper
- 1 Organic lemon
- 2 tbsp olive oil

Cook the shrimp in boiling salted water for 3-5 minutes until done. Peel and finely chop the garlic clove, then mix with the shrimp. Roughly chop the cashews and fold them in. Peel the Thai mango and cut it into thin strips around the pit. Wash and dry the mint and cilantro, shake off excess moisture, pluck the leaves from the stems and tear slightly.

Wash the chili pepper, halve it, remove seeds and membranes, then slice into fine strips. Wash the lemon, halve it and juice it. Combine all salad ingredients in a bowl, season to taste, divide among small bowls, and serve.
