Matjes Herring Salad

Ingredients
- 8 matjes fillets
- 0.25 l milk
- 100 g kidney beans
- 1 large beef tomato
- 2 large boiled potatoes
- 1 tart apple (e.g., Granny Smith)
- 1 tbsp Lemon Juice
- 2 onions
- 150 g crème fraîche
- 100 g Sour cream
- 1 tsp medium-hot mustard
- Salt
- Pepper (freshly ground)
- 3 tbsp wine vinegar
- 0.5 bunch dill

Wash the matjes and soak in milk for about 1 hour. Trim ends of beans and blanch in heavily salted boiling water for ~5 minutes. Remove, shock in ice water, then drain.

Blanch tomato, shock, peel, halve, core, dice flesh. Peel potatoes and cube. Peel apples, quarter, core, and dice small. Immediately drizzle with lemon juice. Slice onions into rings.

Whisk crème fraîche with sour cream, mustard, salt, pepper, and vinegar to taste. Wash dill, finely chop, fold half into sauce. Remove matjes from milk, pat dry, cut into bite-sized pieces. Combine all ingredients, mix gently, and serve arranged in a bowl.
