Sweet Polenta Slices

Ingredients

  • 400 ml milk (3.5% fat)
  • 1 Vanilla bean
  • 1 piece organic lemon zest
  • 2 tbsp whole cane sugar
  • 3 tbsp butter
  • 100 g instant polenta
  • 2 Eggs
  • Cinnamon

Instructions

    Bring the milk to a boil with the split vanilla bean, lemon zest, 1 tbsp sugar and 1 tbsp butter. Stir in the cornmeal while covered for about 5 minutes until it thickens. Remove the vanilla bean and lemon zest, then spread the mixture to a thickness of about 1 cm on parchment paper. Let cool for at least an hour until firm.

    Cut into roughly 16 diamond shapes. Dip each piece through whisked eggs. Heat remaining butter in a pan and fry the slices for about 2 minutes per side until golden brown. Mix the remaining sugar with cinnamon. Sprinkle the polenta slices with cinnamon sugar and serve with cherry or plum compote as desired.
