Raspberry Trifle

Ingredients

  • 0.5 Vanilla bean
  • 250 g raspberries
  • 60 g honey
  • 150 g goat cream cheese
  • 150 g Yogurt (1.5% fat)
  • 75 g cream cheese (fat content; at least 40% fat in the product)
  • 1 splash Lemon juice
  • 40 g amaretti cookies

Instructions

    Split the vanilla bean lengthwise and scrape out the seeds. Wash, pit, and pat the raspberries dry.

    Add the vanilla bean, seeds, raspberries, 1 tablespoon honey, and 2 tablespoons water to a saucepan. Simmer over medium heat for 2 minutes. Remove from heat and let cool.

    Whisk goat cream cheese with yogurt, cream cheese, remaining honey, and a splash of lemon juice until smooth.

    Remove the vanilla bean and fill four glasses with raspberry compote. Spread the cream cheese mixture on top. Roughly crumble cookies and sprinkle over the surface.
