Strawberry-ginger Compote Without Sugar

Spoonsparrow Strawberry-Ginger Compote without sugar: refined sugar is a no-go here – instead we sweeten with birch sugar!

Ingredients

  • 1 Vanilla bean
  • 400 g ginger root
  • 5 tbsp birch sugar
  • 2 tbsp apple juice
  • 500 g strawberries
  • Waldmeister (wild mint)

Instructions

    Wash and trim the ginger, cut into 2-3 cm pieces. Split the vanilla bean lengthwise and scrape out the seeds with a knife. Combine the ginger, vanilla seeds and pod, apple juice, and birch sugar in a pot and simmer gently for about 10 minutes.

    Meanwhile wash, rinse, halve, quarter, and slice some strawberries. Wash the wild mint and shake off excess moisture.

    Let the ginger cool, remove the vanilla pod, fold in the strawberries, and arrange on plates with the wild mint leaves and flowers. Serve the strawberry-ginger compote without sugar.
