Sweet Bread Casserole (Scheiterhaufen)

Ingredients
- 4 old-fashioned rolls (or loaf in equivalent quantity)
- 250 ml milk
- 1 pinch salt
- 0.5 lemon (unprocessed)
- 40 g sugar
- 2 Eggs
- 500 g apples
- 50 g raisins (optional)
- 2 tbsp butter
- butter (for the pan)
- powdered sugar (for dusting)
- 0.5 l milk
- 0.5 Vanilla pod
- 2 eggs (separated)
- 40 g sugar
- 2 tsp cornstarch
Instructions

Preheat the oven to 180°C fan.

Grease a baking dish.

Cut the rolls into slices and place them in a bowl.

Whisk together the milk, salt, grated lemon zest, sugar, and eggs. Pour about two-thirds over the roll slices and let soak.

Meanwhile peel and thinly slice the apples; optionally rinse raisins briefly in hot water.

Layer the roll slices and fruit in the baking dish, alternating as desired.

Top with remaining egg‑milk mixture and scatter butter pieces on top. Bake for 30–45 minutes until golden brown. Dust with powdered sugar before serving.

For the vanilla sauce bring milk and scraped vanilla pod to a boil.

Whisk egg whites into stiff peaks and set aside. Beat yolks with sugar, fold in cornstarch, then gradually whisk in the hot milk. Return mixture to pot, stir, and bring to a gentle boil once more. Remove from heat, discard vanilla pod, and fold in the cold meringue.
