  • 350 ml milk (3.5% fat)
  • 1 tbsp butter
  • 100 g Millet
  • 3 eggs
  • 1 small lemon
  • 1 tbsp liquid honey
  • 250 g low-fat quark
  • 50 g ground almonds (2 tbsp)
  • 2 ripe pears
  • a pinch salt
  • 2 tbsp almond slivers

Instructions

  1. 1.

Split the vanilla pod lengthwise, scrape out the seeds and bring the milk to a boil in a large pot with them.

  2. 2.

Stir in butter and millet, bring to another boil, then cover and let it simmer on a turned-off burner for about 15 minutes.

  3. 3.

Meanwhile separate the eggs. Place the whites in a tall container and the yolks in a bowl.

  4. 4.

Squeeze the lemon and add its juice to the yolks. Add honey, quark and ground almonds and beat with a hand mixer for about 4 minutes until frothy.

  5. 5.

Wash, peel, quarter, core and finely dice the pears.

  6. 6.

Fold the cooked millet mixture with the pear cubes into the yolk mixture.

  7. 7.

Beat the whites and salt with the hand mixer to stiff peaks and fold them into the yolk mixture as well.

  8. 8.

Line a rectangular baking dish with parchment paper, pour in the batter and smooth it out with a spatula or plastic spoon.

  9. 9.

Sprinkle almond slivers over the casserole and bake in a preheated oven at 200 °C (convection: 180 °C, gas: level 3) for 25–30 minutes.
