Ingredients

  • 1 large tomato
  • 1 Red Onion
  • 1 Avocado
  • Salt
  • 1 lemon (juice)
  • 4 lettuce leaves (e.g., romaine)
  • 2 coriander greens
  • 5 g Ginger
  • 250 g surimi
  • 2 tbsp soy oil
  • white pepper
  • 4 buns (e.g., with bran)
  • 4 Tbsp mayonnaise

Instructions

    Wash the tomato and cut out four nice slices from the center; use the rest elsewhere. Peel the onion and slice into thin rings. Halve the avocado, remove skin and pit, then slice. Drizzle with a little lemon juice and season with salt.

    Wash the lettuce and shake dry. Rinse the coriander, shake dry, and roughly chop the leaves. Peel the ginger and grate finely. Cut the surimi into pieces and crumble them into individual fibers. Mix the surimi with ginger, remaining lemon juice, oil, salt, pepper, and coriander greens; season to taste.

    Split the buns in half and lightly toast the cut surfaces on a grill or toaster. Spread mayonnaise on the undersides and place one lettuce leaf on each. Top with the surimi salad, then add avocado slices, tomato slices, and onion rings. Place the top bun and serve.
