Hamburger with Tartar and Tartar Sauce

- 4 lettuce leaves (e.g., endives)
- 8 radishes
- 1 Red Onion
- 1 Shallot
- 500 g beef tartare
- 1 tsp lemon zest (unprocessed)
- 1 tsp sharp mustard
- Salt
- Pepper (freshly ground)
- 4 sunflower seed buns
- 4 tbsp ketchup

For the sauce, peel and finely dice the shallot. Peel the eggs, halve them, separate the yolks for other use. Beat the whites and mix with finely chopped cucumbers and capers. Whisk mayonnaise with cucumbers, capers, egg white and shallot; season with 1–2 tbsp cucumber water, salt, and pepper. Press garlic into the sauce. Stir in chives and taste.

Wash the lettuce, dry it, and trim if necessary. Wash, clean, and slice radishes thinly. Peel the onion and cut into fine rings. Remove the shallot skin and finely chop. Combine tartare, lemon zest, mustard, salt, and pepper in a bowl; knead well. Taste and shape into four patties.

Halve the buns and layer with lettuce. Place one tartar patty on each half and drizzle some tartar sauce. Top with onions and radishes, then drizzle ketchup. Cover with the top bun and serve.
