Ingredients

  • 1 handful mixed salad (e.g., radicchio, arugula, frisée)
  • 1 large tomato
  • 1 large pickled cucumber
  • 0.5 Red Onion
  • 1 Spring onion
  • 500 g pork mince
  • 1 tbsp ground flaxseeds
  • Salt
  • Pepper (freshly ground)
  • 2 tbsp Vegetable oil
  • 4 sesame buns

Instructions

    Add egg yolks to a mixing bowl with a pinch of salt. Add mustard and whisk thoroughly with a whisk. Gradually drizzle the oil in droplets, then in a thin stream while continuing to whisk, ensuring the oil blends well with the yolks. The mayonnaise should have a glossy sheen and be thick‑creamy. Finish by adding ketchup and lemon juice, taste, and refrigerate until needed.

    Wash, dry, and tear the salad into bite‑sized pieces. Wash the tomato and cut four even slices from the center; use remaining tomatoes elsewhere. Slice the pickled cucumber diagonally. Peel the onion and slice thinly.

    Wash the spring onion, trim, and cut into thin rings. Mix with pork mince, flaxseeds, salt, and pepper. Form 4 patties from the mixture and fry in hot oil for 4–5 minutes on each side.

    Halve the buns and toast the cut sides lightly if desired. Spread mayonnaise on the bottom halves, layer salad and tomato slices, place a patty on top, add cucumber and onion slices, then cover with the top bun. Serve with extra mayonnaise.
