Summer Salad with Apples, Shrimp and Edible Flowers

Ingredients

  • 40 g arugula
  • 40 g romaine lettuce
  • Salt
  • Pepper (freshly ground)
  • 0.5 tsp mustard
  • 1 pinch sugar
  • 2 tbsp white wine vinegar
  • 3 tbsp olive oil
  • 1 cucumber
  • 1 apple
  • 6 shrimp
  • 2 Garlic cloves
  • 6 tbsp Olive oil
  • 1 lemon (juice)
  • nasturtium flower
  • dandelion flower

Instructions

    Wash the shrimp. Peel and finely chop the garlic. Mix olive oil with lemon juice and garlic. Pour over the shrimp and let marinate for 30 minutes, then cook the shrimp in a pan for about 2 minutes per side. Set the pan aside.

    Clean, wash, dry, and roughly tear the romaine lettuce and arugula.

    Wash, peel, and slice the cucumber into thin rounds.

    Wash the apple, quarter it, remove the core, and cut into thin slivers.

    Combine mustard, salt, sugar, pepper, and vinegar; whisk in the oil. Arrange the lettuce, arugula, cucumbers, apple slices, and shrimp on plates and drizzle with the vinaigrette. Garnish with edible flowers and serve immediately.
