Ingredients

  • 300 g Cantaloupe melon (peeled and seeded)
  • 300 g honeydew melon (peeled and seeded)
  • 1 Red Onion
  • 2 tbsp pine nuts
  • Mint leaves
  • 1 tbsp white balsamic vinegar
  • 1 tbsp lime juice
  • 2 tbsp grape seed oil
  • 0.5 tsp honey
  • sea salt (ground)

Instructions

    Whisk honey with oil, lime juice and balsamic vinegar. Season with sea salt.

    Cut melons into cubes. Peel, halve and slice onion into strips. Toss everything with the dressing, pine nuts and mint. Let rest for 10 minutes, taste again and serve.
