Stuffed Zucchini with Bell Peppers

Ingredients

  • 1 Zucchini
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 green bell pepper
  • 0.25 bundle thyme
  • 0.25 bundle chervil
  • 4 blanched leek strips

Instructions

    Wash and trim the zucchini, then slice lengthwise into very thin ribbons.

    Wash the peppers, halve them, remove seeds and white membranes, and cut into narrow strips. Rinse herbs, shake dry, and trim.

    Gather a few pepper strips with some herb sprigs into small bundles, wrap each bundle in a zucchini ribbon, and secure with a blanched leek strip before serving.
