Stuffed Baked Apple

Ingredients
- 0.5 l milk
- 2 EL vanilla sugar
- 2 TL starch
- 2 EL sugar
- 2 egg yolks
- 4 tart apples (e.g., Granny Smith)
- 75 g toasted almond kernels
- 2 TL raisins
- 3 EL powdered sugar
- 1 tsp ground cinnamon
- 50 g marzipan dough
- butter (for the pan)
- 20 g butter (in pieces)
- powdered sugar (for dusting)
Instructions

Take 3-4 tablespoons of milk for the vanilla sauce and set aside. Boil the remaining milk with vanilla sugar, then remove from heat. Mix starch and sugar; whisk into the reserved milk until smooth, then fold in egg yolks to create a homogeneous mixture. Stir this into the non‑boiling milk and gently heat (do not boil) until it thickens into a creamy sauce, cooling occasionally while stirring.

Preheat the oven to 180°C fan.

Wash, dry, and core the apples. For the filling, mix half of the almonds with raisins, 1 EL powdered sugar, and cinnamon; finely chop marzipan dough and fold in. Stuff each apple, place in a buttered baking dish, dust with remaining powdered sugar, top with butter pieces, and bake for 30-40 minutes.

Remove from oven, plate, pour warm vanilla sauce over the apples, sprinkle with leftover almond flakes, and serve dusted with powdered sugar.
