Ingredients

  • 6 apples (e.g., Boskop)
  • 2 tbsp lemon juice
  • 100 g walnut kernels
  • 1 tbsp honey
  • 50 ml sherry
  • 150 g blue cheese (e.g., Gorgonzola)
  • sunflower oil (for the dish)
  • 2 tbsp butter

Instructions

    Preheat oven to 180°C with fan and top heat.

    Wash apples and cut off a lid. Remove the core, leaving about a 2 cm wide rim. Separate the flesh from the core and chop small. Mix with lemon juice, nuts, honey and sherry in a bowl. Roughly crumble the cheese and fold in. Fill the apples with the mixture. Place the lids back on the apples and set them in an oiled baking dish. Drop butter pieces into the dish and bake for 20-25 minutes until golden brown.
