Baked Apple with Cinnamon Sauce

Ingredients
- 15 g starch
- 500 ml milk
- 1 tsp cinnamon
- 50 g sugar
- 1 packet vanilla sugar
- 4 apples
- 50 g chopped almonds
- Lemon
- 2 tbsp cane sugar
- 30 g Butter
- juice of one orange
- Lemon balm (for garnish)

Stir starch with a little cold milk and cinnamon. Bring the remaining milk, sugar, and vanilla sugar to a boil. Whisk in the prepared starch mixture and bring to a second boil. Let the sauce cool while stirring occasionally.

Rinse apples and cut off a lid. Remove the core with a melon baller and hollow out slightly. Rinse lemon, pat dry, and zest it with a zester or peel it finely. Mix almonds, cane sugar, and lemon zest, then fill the apples with this mixture.

Grease a fireproof dish with butter and place the apples inside. Put the apple lids on and pour in orange juice. Top each apple with small butter pieces. Bake in a preheated oven at 200 °C (or gas: level 3‑4, fan: 180 °C) for about 20 minutes.

Serve the baked apples with the cinnamon sauce, garnished with lemon balm.
