Ingredients

  • 200 g shallots
  • 3 tbsp sugar
  • 200 ml blood orange juice
  • Salt
  • Pepper
  • 2 stuckling chickens (250 g each)
  • 3 blood oranges
  • 1 sprig rosemary

Instructions

    Peel the shallots. In a pan caramelize the sugar, toss in the shallots and deglaze with the blood orange juice. Cook over medium heat for 5 minutes and season with salt and pepper.

    Season the stuckling chickens with salt and pepper and place them on a baking sheet lined with parchment paper. Add the shallot mixture to the pan, pour in broth, and bake in a preheated oven at 200°C (2nd rack) for 40 minutes.

    Peel the oranges so that all white pith is removed and quarter them. Chop the rosemary. After 40 minutes add both to the chickens and continue baking for another 10 minutes.
