Ingredients

  • 700 g tomatoes
  • 100 g onions
  • 2 cloves garlic
  • 2 tbsp olive oil
  • 2 sprigs thyme
  • 2 tbsp Tomato paste
  • 1 tbsp paprika powder
  • 300 ml Vegetable broth
  • 160 g tuna fillet
  • 2 tsp lemon oil
  • 4 edible flowers (e.g., marigold)
  • Tabasco
  • Cayenne pepper
  • Salt
  • 100 ml heavy cream

Instructions

    Wash, clean and quarter the tomatoes. Peel and finely chop the onions and garlic.

    Heat olive oil in a pot and sauté the onions and garlic until translucent. Add tomato paste and lightly toast, then sprinkle paprika powder. Add tomatoes, thyme, and vegetable broth. Simmer on medium heat for 20 minutes, reducing slightly.

    Meanwhile cut the tuna into four equal cubes and skewer them. Just before serving season with salt and lemon oil, garnish with edible flowers.

    Remove the thyme sprigs. Puree the soup with an immersion blender and strain through a sieve. Season with Tabasco, cayenne pepper, and salt. Keep warm.

    Whip the heavy cream until stiff peaks form. Ladle soup into cups and top with tuna skewers and a dollop of whipped cream.
