Ingredients

  • 400 ml Vegetable broth
  • 1 tsp ground cumin
  • 3 cardamom pods
  • Salt
  • black pepper (freshly ground)
  • 350 g instant couscous
  • 1 Shallot
  • a handful of mint
  • 1 Pomegranate (seeds)
  • 2 tbsp olive oil
  • 1 tbsp Lemon Juice
  • Rose water
  • a pinch ground cinnamon
  • organic rose petals for garnish

Instructions

    Bring the broth with cumin, cardamom, salt and pepper to a boil, sprinkle in the couscous, remove from heat and let it stand for about 10 minutes.

    Peel and finely chop the shallot. Rinse the mint, shake dry, pluck the leaves and roughly chop them.

    Mix together the shallot, pomegranate seeds and olive oil with the couscous. Season with lemon juice, rose water, salt, cinnamon and pepper, then serve garnished with rose petals.
