Strawberry Tiramisu
Mit Mascarpone, Quark und Joghurt kommt das Erdbeer-Tiramisu light daher und schmeckt einfach hinreißend. Spoonsparrow verrät Ihnen das Rezept!
Ingredients
- 400 g Strawberries
- 4 tbsp Multivitamin juice
- 0.5 lemon
- 50 g Mascarpone
- 250 g low-fat quark
- 200 g yogurt (1.5% fat)
- 1 sachet Setting agent
- 0.5 tsp vanilla powder
- 2 tsp Granulated sugar
- 130 g Ladyfingers

Carefully wash the strawberries in a bowl with cold water, remove them and drain well on kitchen paper. Then hull them.

Place about 150 g of strawberries and multivitamin juice in a tall container and puree finely with an immersion blender. Squeeze the lemon half and season the strawberry puree with lemon juice as desired.

Place mascarpone, quark and yogurt in a large bowl. Mix setting agent, vanilla powder and sugar in a small bowl and sift over the mascarpone mixture. Whisk everything smooth with a hand mixer.

Line a loaf pan (approx. 25x11 cm) with plastic wrap.

Place half of the ladyfingers with the sugar side down in the pan and drizzle with half of the strawberry puree.

Spread half of the mascarpone-quark cream on top and smooth with an offset spatula.

Cut the remaining strawberries into slices and spread about 2/3 of them on the cream (store the rest covered in the refrigerator). Place the remaining ladyfingers with the sugar side down on top.

Set aside 2 tbsp of puree, drizzle the rest over the ladyfingers. Spread the remaining mascarpone-quark cream on top. Cover the pan with plastic wrap and refrigerate for at least 3 hours.

Invert onto a serving plate, remove the plastic wrap and cut the strawberry tiramisu into 4 portions. Arrange on plates, garnish with remaining strawberry puree and remaining strawberry slices and serve.
