Ingredients
- 150 g millet
- 1 vanilla bean
- 0.5 organic lemon
- 0.5 tsp cinnamon powder
- 2 tbsp raw sugar
- 380 ml oat drink (oat milk)
- 2 mandarins
- 3 Eggs
- 1 pinch Salt
- 300 g lactose-free quark (20% fat)
- 1 tbsp butter
- 2 tbsp shaved almonds

Rinse the millet thoroughly. Split the vanilla bean lengthwise and scrape out the seeds with a knife. Rinse the lemon half, pat dry, and finely grate the zest. Squeeze the juice.

Combine millet, vanilla seeds, cinnamon, sugar, and oat drink in a pot. Bring to a boil and simmer over medium heat according to package instructions, stirring occasionally. Remove from heat and let stand, uncovered, for 10 minutes.

Meanwhile, peel the mandarins and cut them into thick slices across. Separate the eggs. Beat the egg whites with a pinch of salt until stiff peaks form. Mix the yolks with lemon zest, lemon juice, and quark and add to the millet mixture. Gently fold in the egg whites.

Grease a baking dish. Fill with the millet-quark mixture, smooth the top, and top with mandarins. Bake in a preheated oven at 180 °C (160 °C convection; Gas: Mark 2–3) for 40–50 minutes. Sprinkle with shaved almonds to serve.
