Spoonsparrow's Lemon-Coconut Energy Balls are a healthy treat for in between meals.

Ingredients

  • 150 g Cashews
  • 70 g Coconut flakes
  • 1 Organic lemon
  • 10 g ginger root
  • 1 tbsp Birch sugar (15 g; Xylitol)
  • 1 tsp turmeric powder
  • 30 g Liquid coconut oil
  • 2 tbsp Ground almonds (15 g)

Instructions

    Finely chop the cashews in a food processor or blender. Add 50 g of coconut flakes and chop everything together finely. Rinse the lemon with hot water, dry it, zest it, and squeeze the juice.

    Add the lemon juice and zest, ginger, xylitol, turmeric, and coconut oil to the coconut-cashew mix and process into a smooth paste in the blender. Add the almonds and mix briefly.

    Shape 16 energy balls from the mixture with damp hands. Place the remaining coconut flakes on a plate. Roll the lemon-coconut energy balls in the coconut flakes, then place them on a plate and let them rest in the refrigerator for about 1 hour.
