Smarte Quarkkeulchen
Smarte Quarkkeulchen von Spoonsparrow: This sweet traditional dish made from potatoes and quark evokes childhood memories!
Ingredients
- 300 g potatoes
- 150 g Low-Fat Quark
- 100 g spelt flour type 1050
- 1 egg (size M)
- 30 g raw cane sugar
- 0.25 tsp vanilla powder
- 2 tsp butter

Peel, wash, and dice the potatoes. Cook in boiling water for about 15 minutes over medium heat. Then drain and let cool for 10 minutes.

Pass the potatoes through a potato ricer into a bowl or mash with a potato masher. Add quark, flour, egg, 25 g sugar and vanilla to the potatoes and knead everything into a smooth dough; if it is too wet, add a little more flour. Shape 6 quarkkeulchen from the dough with damp hands.

Fry the quarkkeulchen one after the other. Heat 1 tsp of butter in a pan for each. Add 3 keulchen and bake golden brown on both sides for about 3-4 minutes over medium heat; fry the remaining quarkkeulchen similarly.

Place the healthy quarkkeulchen on a plate and sprinkle with the remaining sugar. Enjoy warm or cold.
