Lebkuchen Parfait

Ingredients
- 500 g whipping cream
- 2 egg yolks
- 1 egg
- 120 g sugar
- 150 g gingerbread cookies
- vanilla beans
- 20 ml rum
- 2 ripe mangoes
- 50 g sugar
- 1 Pomegranate
- 8 gingerbread hearts
- 8 star anise

Beat the egg yolks and egg until frothy.

Heat the sugar with 50 ml water until dissolved, quickly stir into the egg mixture. Add vanilla bean seeds, chill, then fold in rum. Whip the cream to stiff peaks and gently fold in. Finely crumble gingerbread cookies and fold them in. Pour the mixture into a metal bowl, smooth the top, and place it in the freezer for 4 hours.

Peel the mangoes, separate the flesh from the pit, finely dice one mango, and blend the remaining flesh with sugar. Halve the pomegranate and remove the seeds. To serve, scoop the parfait with a large ice cream scoop onto a plate, drizzle some mango mousse, top with mango cubes, pomegranate seeds, gingerbread hearts, and star anise.
