Ingredients
- 1 tsp rosemary
- 1 tsp butter
- 40 g pistachios
- 4 fresh egg yolks
- 80 g honey
- 1 pinch salt
- 375 ml whipping cream
- grated zest and juice of 1 lime
- 150 g rosehip jam
- mini apples (canned, for garnish)

Sauté rosemary in butter briefly. Roughly chop pistachios. Whisk egg yolks, honey, and salt in a stainless steel bowl. Whisk until creamy over a hot water bath.

Place the bowl in ice water and stir to chill the cream. Whip the cream stiff. Fold the pistachios and rosemary into the honey mixture. Transfer to a chilled, pre-rinsed dish and freeze.

Stir lime zest and juice with the rosehip jam. Slice the parfait, arrange with sauce and apple slices.
