Ingredients

  • 2 fresh egg yolks
  • 60 g sugar
  • 1 packet vanilla sugar
  • 1 tsp cinnamon powder (to taste)
  • 150 g whipping cream
  • 4 cinnamon sticks (for garnish)
  • cinnamon (for dusting)
  • 4 molds

Instructions

    Beat the egg yolks with sugar for about 10 minutes until a white‑creamy mixture forms. Stir in the cinnamon, whip the cream to stiff peaks and fold into the egg mixture. Divide into four molds. Cover and place in the freezer for 4–5 hours.

    Remove the molds from the freezer and let sit at room temperature for 3–4 minutes. Dust the parfaits with cinnamon and serve each garnished with a cinnamon stick.
