Strawberry ice cream with ice cream maker

Ingredients

  • 300 g fresh strawberries
  • 1 Tbsp vanilla sugar
  • 150 g sugar
  • 4 egg yolks
  • 200 ml milk (3.5 % fat)
  • 200 g whipping cream

Instructions

    Wash and halve the strawberries, then quarter them and sprinkle with vanilla sugar; let stand.

    Beat the egg yolks with the sugar in a metal bowl until creamy. Heat the milk and cream in a saucepan until boiling. While whisking, pour the hot mixture into the yolks in a thin stream. Continue whisking over a bain-marie until the custard coats the back of a wooden spoon (remove from the rose). Place the bowl in cold water and chill.

    Blend the strawberries with a hand blender or immersion blender until fine; fold into the custard. Pour the mixture into an ice cream maker and churn for about 30 minutes. Remove the strawberry ice cream from the machine and serve.
