Fruit Ice Without Milk

The dairy‑free fruit ice from Spoonsparrow can be easily made with fruits of your choice following our recipe.

Ingredients

  • 400 g fruits (washed, peeled if desired, pitted and chopped)
  • 100 g sugar
  • 1 lime (juice and zest)
  • 1 fresh egg white

Instructions

    Blend the fruit flesh in a blender and strain through a fine sieve.

    Cook the sugar with 4 tbsp water until syrupy, then cool and mix with the puree, lime juice and zest. Whisk the egg white to stiff peaks and fold into the mixture. Pour the blend into a shallow metal pan and freeze, stirring occasionally to prevent large crystals from forming.

    When the mixture is half frozen, pour it into cups, insert sticks, and chill for 2–3 hours.
